An Authentic Dumpling Recipe

自制水饺皮做法:
食材:
中筋面粉200克
水100毫升
盐3克
步骤:
将面粉、水、盐倒入盆中,搅拌均匀,直到面团成型。
盖上湿布,静置30分钟。
稍微擀开面团后,分割成每块约10克,擀成圆形水饺皮。
中筋面粉 (zhōng jīn miàn fěn): all-purpose flour
搅拌 (jiǎo bàn): to stir; to mix
湿布 (shī bù): damp cloth
擀开 (gǎn kāi): to roll out (dough)
Homemade Dumpling Wrapper Recipe:
Ingredients:
200g all-purpose flour
100ml water
3g salt
Steps:
Place the flour, water, and salt into a bowl, and stir until the dough comes together.
Cover with a damp cloth and let it rest for 30 minutes.
After resting, roll out the dough slightly, divide it into 10g portions, and roll each portion into a round dumpling wrapper.
超万用口味肉馅做法:
食材:
猪绞肉150克
包菜150克
葱姜水17毫升
葱花20克
世界名菜酱100克(可以选择泰式打拋、韩式辣炒、日式照烧、南洋叻沙等)
蒜风味油10毫升
步骤:
将包菜切小块,加入盐抓腌,静置10分钟后挤掉水分。
用料理棒制作葱姜水,比例为姜葱与水1:10,过滤后备用。
将猪肉放入盆中,分次加入葱姜水,直到肉馅变得有黏性。
将包菜与调味酱料(如泰式打拋酱)混合,再加入蒜风味油,搅拌均匀。
将馅料包入水饺皮中,完成。
这样做出来的水饺不仅口感Q弹,肉香十足,还能根据个人口味选择不同的酱料,增加丰富的层次感。

照烧 (zhào shāo): teriyaki (a Japanese cooking style)
叻沙 (lè shā): laksa (a Southeast Asian noodle soup)
蒜风味油 (suàn fēng wèi yóu): garlic-flavored oil
盐抓腌 (yán zhuā yān): to massage with salt (for marinating or drawing out moisture)
过滤 (guò lǜ): to filter
Q弹 (Q tán): chewy; with a bouncy texture
Versatile Meat Filling Recipe:
Ingredients:
150g ground pork
150g cabbage
17ml scallion-ginger water
20g chopped scallions
100g world-famous sauce (choose from Thai basil, Korean spicy stir-fry, Japanese teriyaki, or Southeast Asian laksa)
10ml garlic-flavored oil
Steps:
Cut the cabbage into small pieces, sprinkle with salt, and massage it to release moisture. Let it sit for 10 minutes, then squeeze out the excess water.
Use a blender to make scallion-ginger water with a ratio of 1:10 (ginger and scallion to water), then strain it and set it aside.
Place the ground pork in a bowl and gradually add the scallion-ginger water in 2-3 portions, mixing well after each addition until the meat becomes sticky.
Add the cabbage and the chosen sauce (such as Thai basil sauce) into the meat, and mix in the garlic-flavored oil. Stir everything together.
Fill the dumpling wrappers with the prepared filling, and seal them.
These homemade dumplings will have a chewy texture and a rich meat flavor. You can also customize the filling with different sauces, adding layers of flavor according to your preferences.
